The metabolism of the oral flora. 2. The oxidation of some sugars by mixed human saliva

Abstract
The salivary flora metabolize fructose at a significantly lower rate than glucose, maltose, or sucrose. Subjects with a comparatively low DMF number (number of teeth decayed, missing or filled) also show differences in oxidation rate between glucose and maltose, and between sucrose and maltose, but not between sucrose and glucose. Subjects with a high DMF number did not show these differences.
