Abstract
The application of epidemiological methods to an analysis of evidence found in a review of the literature has revealed a possible source of infection commonly overlooked. There is strong evidence that a minimum of 1.25% of the cattle carcasses and 1.15-3.5% of the swine carcasses are contaminated with Brucella. These organisms are widely distributed throughout the lymph glands of the body which may be found in retail cuts of meat and in prepared meat products. An infection rate of 272/100,000 due to contact with meat was suggested by the available information found in the literature.
