Abstract
About 50% of the reducing power of cozymase was destroyed by heating with dilute alkali. An acid group was liberated in the process. If cozymase was reduced with Mg powder in acid solution, the total reducing power remained practically unchanged, but the reducing power of such reduced cozymase was stable to heat and alkali. Reduced cozymase was also inactive in alcoholic fermentation.
