Abstract
Water-in-oil microemulsions can form thermo-reversible gels on addition of the water-soluble (bio)polymer gelatin; a small-angle neutron-scattering (SANS) study, supported by electrical conductivity measurements, provides evidence that the aqueous content of the gel consists of a rigid network of gelatin–water rods coexisting with microemulsion droplets.Keywords
