Abstract
Hypercholesterolemia represents a key factor in the etiology of atherosclerosis. A sizeable reduction in the consumption of dietary saturated fatty acids and cholesterol is needed, therefore, in order to decrease plasma cholesterol levels in individuals and in populations at high risk. In people who are not overweight, calories from saturated fatty acids need to be replaced with other sources of energy. In this case, monounsaturated fatty acids might represent a reasonable alternative to polyunsaturated fatty acids and starch, in view of their favourable effects on plasma lipoprotein concentrations and other factors presumed to be etiologically linked to atherosclerosis.Keywords
