Color and Optical Properties of Clingstone Peaches Related to Maturity

Abstract

OPTICAL properties of clingstone peaches from nine cultivars in three maturity categories were measured by tristimulus colorimeter and spectrophotometer. Significant difference in skin and flesh (fresh and canned) color occurred among cultivars, maturity levels, and flesh positions. Present flesh color maturity charts did not match the calculated flesh color coordinates. The largest spectral differences due to maturity occurred at 670 nm, with minor differences in the 500 to 600 nm region. The reflectance ratio 670/800 was best for maturity sorting whole peaches and peeled halves. Color sorting would more effectively remove immature peaches than over-mature peaches.
