Modification avec l’âge des seuils gustatifs de perception et de reconnaissance aux saveurs salée et sucrée, chez l’homme

Abstract
Eighty-one persons of both sexes were studied. The thresholds of perception and recognition of sweet taste are much higher in individuals from 60 to 93 years than in those of 20 to 39 years, regardless of sex. Threshold of perception of salt was raised in men but remained fairly constant in women between 20 and 93 years. Threshold of salt recognition is much higher in men than in women at all ages. Presence or absence of dental protheses did not affect the response.
