The carbohydrates of the Jerusalem artichoke and other Compositae

Abstract
The existence in the Jerusalem artichoke (Helianthus tuberosus) was demonstrated of a series of at least 7 non-reducing substances with RF''s ranging from that of sucrose to zero, consisting chiefly of fructofuranoside residues, but containing glucose residues in proportions decreasing with RF. These substances are present in the stems, tubers and roots of the Jerusalem artichoke, and in the underground organs of seven other species of Compositae. In all extracts examined fructose residues were distributed evenly among those components with RF''s sufficiently high for them to be isolated for analysis. In the artichoke tuber the proportion of the total fructose residues contributed by the 5 components with greatest Rf ''s varied from 15% in Sept. to 55% in early spring.
