Abstract
Analysis of the utilization of various peptides, especially leucine peptides, by 10 lactic acid bacteria[long dash]Streptococcus faecalis (strains 9790 and 8043) Lactobacillus delbruckii, L. casei, L. dextranicum,L. citrovorum, (strains 8081 and 8082), L. arabinosus, L. fermenti and Leuconostoc mesenteroides[long dash]showed that their growth-promoting activity depended upon the position of leucine and the nature of the surrounding amino acids. This type of analysis may become useful for the establishment of the order of amino acid linkage in peptides.Keywords
