Responses of the rat pancreas to three months of an ethanol-rich liquid diet.

Abstract
Male rats (30) were fed for 3 mo. a liquid diet with 36% of calories as ethanol or dextrin-maltose and were examined for pancreatic enzyme and secretory activity. The ethanol diet increased pancreatic lipase by about 30% and decreased both amylase (-36%) and the amylase:chymotrypsinogen ratio (-42%). Basal secretion of both bicarbonate and amylase was lower (-39% and -69%) in ethanol-consuming rats but secretion stimulated maximally by 2-deoxyglucose did not change.
