Abstract
A method to simultaneously identify and quantitate the major carboxylic acids, sugars, glycerol, and ethanol in wines and grape musts is proposed. The technique involves isocratic separation, an ion-exchange column, and refractive index and UV detection (at 214 nm) without sample preparation. Statistical evaluation shows that the high-performance liquid chromatographic (HPLC) method is highly reproducible and reliable. The results of the HPLC analyses and the data obtained by standard methods are compared.Keywords
