Enzymatic preparation of methyl and ethyl .BETA.-D-fructofuranosides from sucrose.

Abstract
A new method to prepare methyl and ethyl .beta.-D-fructofuranosides from sucrose was developed in aqueous methanol and ethanol solution using commercial yeast invertase. The fructosides were purified by column chromatography and gave a single peaks in gas chromatography, they were identified by 13C-NMR spectrum and optical rotation. This enzymatic method was superior to chemical and enzymatic, methods reported previously, because of the simple process, smooth separation and good yield. Furthermore, the best reaction conditions for yielding .beta.-D-fructofuranosides were: alcohol concentrations 20 .apprx. 30%, sucrose 16%, invertase 0.2 .apprx. 0.4%, reaction temperature 20.degree.
