Abstract
A phosphoprotein (herring-egg phosvitin) has been isolated from the eggs of the herring by a procedure involving extraction with butanol-1-ol of a water-soluble lipoprotein complex. The calcium salt of the phosvitin contained 7.6% of nitrogen and 12.0% of phosphorus. The protein contained only five amino acids, namely serine, aspartic acid, glutamic acid, valine and threonine.
