Abstract
Of thirty-nine British pitching yeasts, twelve contained only a single strain, sixteen had two major strains, while the rest had three or more components. The seventy-eight pure strains so isolated were classified according to their flocculation characteristics. About half the strains examined formed chains of cells, three-quarters were capable of producing yeast-heads during fermentation, and about half were flocculent.
