Abstract
The shrinkage in dehydration of some Nigerian mot crops namely Maninot Utilissima and Dioscorea Rotunda was investigated. The samples ofe ach foodstuff with how physical properties were dried in a stream of hot air and the product’s surface areas and moisture contents determined.Keywords
