Abstract
Forty-five constituents were identified in the essential oil of Origanum syriacum (Za'atar) growing in Israel and Mt. Sinai, Egypt. The oils of thymol and carvacrol chemovarieties from Israel are qualitatively similar, while the carvacrol variety found on Mt. Sinai is noticeably different due to the presence of geraniol, geranyl esters and ethyl cinnamate.Keywords
