Abstract
A trial was undertaken to compare the carcass composition of purebred Angus and crossbred Charolais-Angus, South Devon-Angus, Hereford-Angus, and Friesian-Angus steers. The preslaughter, hot carcass, boneless meat, and bone weights ranked from heaviest to lightest in the following order: Charolais-Angus, Friesian-Angus, South Devon-Angus, Hereford-Angus, and Angus-Angus. The Friesian-Angus had the heaviest weight of excess fat and the lowest percentage of meat, whereas the Charolais-Angus had the lowest weight of fat and the highest percentage of meat of the breeds compared.Keywords
