Abstract
The protein-free fraction of skim milk incubated with S. lactis for 0, 24 and 96 hrs. was investigated for amino acids and peptides by paper chromatography. Evidence was presented for the presence in the protein-free fraction of 3 peptides at 0 hour, 5 peptides after 24 hrs. and 6 peptides after 96 hrs. of incubation.Keywords
