Survey of Food Service Practices in Nursing Homes

Abstract
Food purchasing practices in 13 proprietary nursing homes were appraised. Five selected patients from each home (or a total of 65 patients) were studied to learn if food intakes met the National Research Council''s Recommended Dietary Allowances and if specific factors affected the eating patterns. The study revealed a need for improvement in all areas of food service and indicated that knowledge and skills in nutrition should be an essential segment of the background of nursing home personnel. The City Health Department is utilizing the survey information in developing educational programs to improve the current situation.
