Preparation and Properties of Aminoacetylated β-Casein

Abstract
A new protein aminoacetylating agent, the hydroxysuccinimide ester of trifluoro- acetylaminoacetic acid (TFA-glycine) has been prepared. Lysine residues of fi-casein A 2 have been trifluoroaeetylaminoacetylated in dimethylsulfoxide. Trifluoroacetyl groups were removed with molar piperidine at 0 C. The aminoacetylated fl-casein A 2 was less reactive to t~Tpsiu than unmodified protein. Gel electrophoretic behavior of aminoacetylated fl-caseiu A 2 reflected the difference in basicity between e-amino groups of lysyl side-chains and a-amino groups of the e-glycyllysyl side-chains.
