Catalase in Honey

Abstract
Twenty-eight honey samples were analysed for catalase activity by a spectrophotometric method. Results were compared with previous data on diastase and peroxide accumulation in the same samples. Statistical analysis indicated a direct relation between amounts of catalase and diastase, and an inverse relation between catalase and peroxide accumulation.Keywords
