Abstract
The distribution of lipase among milk proteins was investigated by chromatography on DEAE [diethylaminoethyl] cellulose and filtration through Sephadex G-200. Protein components were identified by electrophoresis in starch gel containing 7 M urea. The effect of the dissociating agent dimethylformamlde on distribution of lipase was studied. Results showed that the lipase in milk Is normally in association with [kappa]-casein but can be dissociated from it. It is concluded that lipase is a discrete minor component of the casein system. This publication has 10 references indexed in Scilit:
