Partial Analysis of Milk Triglycerides with Lipase Iodine131 Retention in Calves

Abstract
Milk fat was digested with a lipase from Geotrichum candidum, which is highly specific for cis oleic acid. The free fatty acids contained 61. 8 [image]% oleic acid as compared to 19.9 in the original triglyceride. Fatty acid compositions of the mono-, di-and residual triglycerides are presented. The data suggest that triglycerides of the type; butyrate- palmitate, myristate- oleate, are present in milk fat.This publication has 7 references indexed in Scilit:
