Separation of Carbohydrates in Dairy Products by High Performance Liquid Chromatography

Abstract
A simple procedure is described for determination of carybohydrates commonly in dairy products. An Aminex HPX-87 carbohydrate column and refractive index detector were used to resolve lactose, glucose and galactose in only 8 min. An Aminex Microguard Anion/OH cartridge was used to remove interfering acids and milk salts from dairy foods. The problem of resolving lactose from sucrose on resin based systems is discussed. Applications include determination of carbohydrates in yogurt and cultured buttermilk.
