Effect of Fattening upon Certain Characteristics of Connective Tissue in Aged Cows

Abstract
Two experiments with 8 cutter cows fed for a period of 70 days, which brought them to the utility grade, were made to determine the effect of fattening on certain physical and chemical changes in the semimembranous muscle. At the end of the feeding period the increased fat content of the muscle proved to be highly significant and so likewise the tenderness shear values. There was a highly significant decrease in collagenic nitrogen calculated as percent of total protein nitrogen; yet this difference was not significant on a moisture fat-free basis. Copyright © . .
