Abstract
A method has been developed for the analysis of NDMA in malt and beer. It is based on denitrosation of NDMA by HBr and derivatisation with NBD-CI followed by HPLC with fluorescence detection. The method is compared with results obtained with the Thermal Energy Analyzer.Keywords
