Abstract
Lipoxidase was demonstrated in germinating oil seeds by means of oxygen uptake in the conventional Warburg apparatus. The unsaturated fatty acids used as substrates were oxidised to peroxides. In several seeds inhibitors of the enzyme were detected. " Lipodehydrase" was measured by the reoxidation of reduced indamine dyes, especially Bindschedler''s Green. This reaction is considered to be due to enzymes distinct from lipoxidase. Certain seeds, e.g. those of the Cucurbitaceae, only attack the higher fatty acids and oleic acid; others, e.g. soy bean, also attack linoleic and lino-lenic acids. It is concluded that there are at least 2 "lipo-dehydrases": one for the saturated acids C10-C16, and one for more unsaturated acids. The "lipodehydrases" have no apparent co-factor requirements.Keywords
