Abstract
Summary: Sandwich enzyme immunoassay ofMucor mieheiproteinase (from the commercial preparation Fromase) has been developed using horseradish peroxidase as a marker. The enzyme may be determined to a detection limit of 50 ng/ml. Slight cross reactions by chymosin, bovine, porcine and chicken pepsin did not affect the assay. Recovery of Fromase added to cheese extracts varied between 92 and 106%.
