A Comparison of the Utilization by Guinea Pigs of Equivalent Amounts of Ascorbic Acid (Vitamin C) in Lemon Juice and in the Crystalline Form

Abstract
Animals fed comparable amounts of ascorbic acid in aqueous solution, and as lemon juice made similar gains in weight, but those receiving lemon juice had fewer hemorrhages when scored for scurvy. The blood plasma levels were the same and there was no appreciable difference in the ascorbic acid content of the adrenals of each group. The data indicate the possibility that lemon juice contains an additional factor which is concerned in the prevention of the hemorrhages characteristic of scurvy.
