Lipid Deposition in Bovine Skeletal Muscle during Growth

Abstract
The quantity of intramuscular lipid increased significantly (P<.01) with animal age but also was influenced by sampling location. The increased intramuscular lipid was due to an increase in the amount of neutral lipid while the amount of phospholipid per unit weight of muscle remained essentially unchanged. Heifers were lighter in live weight (P<.01), had more intramuscular lipid (P<.01) and less phospholipid per unit weight of muscle (P<.05) than steers of the same age. Differences between trials I and II for live weight, percent intramuscular lipid and phospholipid per unit of muscle were significant. Copyright © 1970. American Society of Animal Science .
