Fatty Degeneration of Bovine Longissimus

Abstract
Fatty degeneration of portions of bovine longissimus muscle was observed in muscle from which biopsies had been previously removed. The cause of the fatty degenerated muscle was probably accidental denervation during the muscle biopsy operation. The fatty degenerated muscle consisted primarily of fat cells with remnants of atrophied muscle fibers. There was less collagen connective tissue in the fatty degenerated muscle than in normal muscle. The fatty acid composition of the lipid in the degenerated muscle was similar to subcutaneous fat depots with a high amount of unsaturated fatty acids present.
