Abstract
An [alpha]-glucosidase from barley malt shows trans-[alpha]-glucosylase activity. Heat inactivation and acid inactivation suggest that the [alpha]-glucosidase activity and the trans-[alpha]-glucosylase activity are both caused by the same enzyme. The main oligosaccharides from maltose were identified as isomaltose, panose and maltotriose. This publication has 7 references indexed in Scilit:
