Abstract
The extent of aleurone cell damage suffered by wheat during grinding has been shown to have a profound effect upon its “neutral detergent fibre” value. Sound aleurone cells have been found to retain much of their contents during the fibre determination, while damaged cells retained none. The implication of these results upon previous work is discussed. Comparisons of NDF values of different wheat or bran samples are only meaningful when their preparation for testing has involved identical conditions of grinding.
