Abstract
Consumer resistance to overfat meat is growing because of its wastefulness and increasing concern about the probable link between fat consumption and health. Despite this, there is little evidence to indicate any material change in the fatness of British beef carcasses over the past 10 years. The average separable fat content of beef carcasses in both 1974/76 and 1984 is estimated to be 220g/kg (Kempster, Cook and Grantley-Smith, 1986).Keywords
