Lipolysis by a B-Esterase Preparation from Milk

Abstract
A [beta]-esterase concentrate was prepared from milk and checked for lipolysis of 2-oleyl dipalmitin and milk fat. It was found that the [beta]-esterase concentrate preferentially hydrolyzed the primary ester positions of the synthetic triglyceride and of milk fat and released long chain fatty acids from milk fat.
