Some Physical Properties of Milk. I. Density

Abstract
Effects of temperature arid homogenization pressures on density of whole cow''s milk are reported. Between 18[degree] and 44[degree] C, density was approximately a linear function of temperature. Density of milk was nearer to density of water at 39[degree] C than at any other temperature. Milk did not exhibit a maximum density at 4[degree] C. Although homogenization of milk at pressures of 300 to 3500 lb./sq. in. (psi) had no measurable effect upon density, homogenization pressures below 300 psi significantly increased milk density.
