Abstract
Glutathione added to solns. of ascorbic acid containing ascorbic acid oxidase (cucumber or cauliflower juice) had no effect on the rate of oxidation of the ascorbic acid at pH 6. In a similar mixture at pH 7.4 the glutathione inhibited the oxidation of the ascorbic acid, but still both ascorbic acid and glutathione were oxidized simultaneously. This indicates that the reduction of the dehydroascorbic acid by glutathione is a slower reaction than the enzymic oxidation of the ascorbic acid. No enzyme could be found in cucumber and cauliflower juices which would catalyze the reduction of dehydroascorbic acid by glutathione.
