Abstract
The potentials of ascorbic acid drifted. Electrodes were easily polarizable. The potential for a given pH is not a function of the ratio of oxidant to reductant. The same potential, for a given pH, is reached regardless of the absolute conc. of reductant. The variation of Eh with pH is approximately expressed, at 30[degree], by: Eh =+0.375[long dash]0.060 pH. The presence of ascorbic acid in lemon juice was confirmed. This publication has 1 reference indexed in Scilit:
