Abstract
Außer Saccharose sind keine D-Glucosylfructosen, weder das α(1 → 1)- noch das α(1 → 3)- oder das α(1 → 5)- oder das α(1 → 6)-Disaccharid, Substrate der β-Fructosidase der Hefe. Die beiden letztgenannten Zucker, Leucrose und Isomaltulose, reagieren jedoch als nichtkompetitiver (Leucrose) bzw. unkompetitiver (Isomaltulose, Palatinose®) Inhibitor mit β-Fructosidase. Dieses Enzym hat sich infolge seiner hohen Spezifität als vorhersageträchtig für kariologische Aspekte von Zuckeraustauschstoffen mit Glykosidbindung(en) erwiesen. No D-glucosylfructoses except sucrose, neither the α(1 → 1)- nor the α(1 → 3)- or the α(1 → 5)- or the α(1 → 6)-disaccharide possess substrate properties for β-fructosidase from yeast. The two latter ones, leucrose and isomaltulose, however, are non-competitive (leucrose) or uncompetitive (isomaltulose, Palatinose®) inhibitors of β-fructosidase from yeast. Due to the high substrate specificity of invertase, assays of its activity have predictive power for cariological aspects of sugar substitutes carrying glycoside bonds between glucose and fructose.Keywords
