Abstract
This review deals with the composition of wheat and of the wheat kernel, digestibility; calorie content of wheat products, the phytic acid problem, the nutritive value of wheat products, and of their proteins in particular, losses in preparation; wheat consumption in relation to various factors, including economic; and enrichment.Keywords
