Abstract
The preparation of a series of gelatins with high molecular weight is described. These were purified by partial f ractionation. The modulus of rigidity of the gelatin gels prepared in this way is independent of the molecular weight, as indicated by the limiting viscosity number, and of the gelatin chain dimensions, as indicated by the N-terminal amino acid residues.Keywords
