Abstract
After a review on the present knowledge of the occurence of tripolyphosphatase in muscular tissue own data of the tripolyphosphatase activity in the bovine longissimus muscle of seven animals are reported. Remarkable differences between animals were observed which seem to depend on the pH of tissue. Nach einem Überblick über die das Vorkommen von Tripolyphosphatase im Muskel betreffenden Arbeiten wird über eigene Messungen der Tripolyphosphatase-Aktivität imLongissimus dorsi-Muskel von sieben Rindern berichtet. Erhebliche Aktivitäts-Unterschiede von Tier zu Tier wurden beobachtet, welche vom pH-Wert des Gewebes abzuhängen scheinen.Keywords
