Determination of Proteolysis by Dye Binding

Abstract
The Orange-G dye binding method for milk protein determination was adapted for measuring bacterial proteolysis. The method was as sensitive as the Hull method for measuring enzymatic proteolysis of milk. The Rosen method did not compare favorably. A proteolysis index may be calculated usingthe Orange-G method that should be an approximately linear function of the fraction of proteolysis. Because of the ease of analysis, it is advocated as arapid screening test for bacterial proteolysis.
