Abstract
From the press juice a specific enzyme preparation was obtained which, aero-bically, oxidizes ascorbic acid to its reversible oxidation product. The reaction is one of the first order; the rate is directly proportional to enzyme conc. and is unaffected by increasing quantities of substrate. The enzyme does not oxidize guaiacum, benzidine. catechol, pyrogallol or p-phenylenediamine.
