Alkylation of Reduced κ-Casein

Abstract
The alkylation of reduced [KAPPA] -casein with acrylonitrile and iodoacetamide results in the complete conversion of disulfides and/or thiol groups to S-alkylcystinyl residues under specified conditions. Acrylonitrile alkylates up to 45% of the lysine residues, whereas iodoacetamide alkylates only 7% of the lysine residues.
