Abstract
The biologic value of proteins may be detd. largely by the "essential" amino acid content, and the fraction of absorbed N excreted in the urine may merely reflect the excess of "non-essential" amino acids which cannot be utilized for lack of the necessary amt. of "essentials". Estimates for the human amino acid requirements/day for N balance are listed, as well as for the protein requirements in terms of milk, soy flour, white flour, and egg proteins. There is relatively good agreement among estimates of different observers. Most striking are the relatively low amts. of cystine and methionine in the case of soy flour and of lysine in the case of white flour.Keywords
