Abstract
Vitamin C is a specific activator for the [beta]-type of animal amylase. [beta]-amylase occurs in animal organs in a practically inactive state. Vitamin C exerts an inhibiting effect on the [beta]- type of plant amylase, but has no effect on the [alpha]-type. Oxidized Vitamin C inhibits a-amylase of plants, but has no effect on the [beta]-type. During the first stages of the growth of grains, the same amylase relations exist as in sprouting grains. The inactivation of [alpha]-amylase during the growth of grains may be related to the vitamin C changes which occur.This publication has 1 reference indexed in Scilit:
