Photocontrol of Anthocyanin Synthesis in Apple Skin.

Abstract
Two distinct radiation-dependent phases of anthocyanin formation were found in apple skin. At 15[degree] the 1st phase is an induction period of about 20 hours without anthocyanin formation. In the 2d phase anthocyanin formation is a linear function of irradiation. The action spectrum for the 2d phase of anthocyanin formation has a principal maximum near 6500 A, a subsidiary maximum near 6000 A, and weak action throughout the visible region. The action spectrum for the 1st phase is similar to that of the 2d phase in the region of 6000 to 7500 A. It is suggested that the photoreceptor for anthocyanin formation is a flavoprotein similar to acyl coenzyme A dehydrogenase.This publication has 12 references indexed in Scilit:
