Abstract
The 3-methyl-2-benzothiazolone-hydrazone test was adapted for the spectrophotometric determination of acetaldehyde in lactic starter cultures. Reaction conditions, uses and limitation of the method are discussed. The procedure was applied in conjunction with diacetyl measurements in studying single- and mixed-strain lactic starter cultures.Keywords
