The Amino Acid Composition of Proteins

Abstract
A protest against the arbitrary practice of basing all calculation of the amino acid content of proteins, for purposes of comparison, on an assumed 16% of N in the protein. In the case of gelatin, silk fibroin and vegetable proteins, whose contents of N differ appreciably from 16%, this practice introduces needless error without any compensating advantage and is to be condemned.
